•Biological hazards include illness-causing microorganisms. A microorganism is a tiny,
usually single-celled organism that can be seen only with a microscope. A microorganism
that can cause disease is called a pathogen. There are four kinds of microorganisms that can
contaminate food and cause illness:
1.Bacteria
2.Viruses
3.Fungi
4.Parasites
Other examples of Biological hazards are certain plant, mushroom, and seafood toxins.
•Chemical hazards include cleaners, sanitizers, polishes, machine lubricants, and toxic
metals.
•Physical hazards are foreign objects that accidentally get into food. Examples include
hair, dirt, bandages, metal staples, and broken glass. Naturally occurring objects, such as
bones in fillets, are also physical hazards.
